Seniorpreneur and AgroProcessor Celebrates World Mango Day with a Cooking Class with Prison Inmates

One day after World Mango Day, Miriam Samuel, proprietor of Screw Pine, an agri-products business, brought attention to the versatility of mangoes, including the health benefits. This active seniorpreneur focuses on transforming local produce into value added agricultural products that create opportunities for income generation and food security.  In addition to increasing the variety of agro-based processed products on the local markets, she also wants to see improvements in the quality of these products.

A self-described culinary creative,  Mrs Samuel is determined to share her knowledge and expertise. Today, she conducted her second hands-on cooking session at the GARD Center with a group of prison inmates. Using mangoes from her garden, she taught them to make mango cheese.

“As a community, let us all do our part to help someone make a fresh start. By teaching them new ways to use fruits and vegetables that are widely available, will can help them redefine their purpose and perhaps discover a passion for agriculture and entrepreneurship,” Samuel said.

Screw Pine offers a range of agri-products  made from both the mango fruit and leaves. This includes wines, jams, jellies, chutney, teas, soaps, essential oils. Grandma Mirie’s most recent addition to her product line is mango powder that can be used in smoothies and desserts. Mango capsules are also in the pipeline to capitalize on the fruit’s medicinal properties.

Mrs. Samuel describes mango as her favorite fruit and she enjoys harvesting, savoring, sharing and preserving it. Through her range of products she gives fellow mango lovers an opportunity to indulge in the sweet taste of mangoes year round. According to Grandma Mirie, the majority of mango production is consumed fresh and only about 1-2% of the fruit is processed to make products.

She recently launched her book “Mirie’s Magic Recipe: Loving, Leading, Legacy,” which positions cooking and gardening  as key metaphors for life.
